Virtual- What's Cooking? Week 1 of 5

The following is the cooking schedule and list of ingredients you will need for each recipe. Feel free to alter the ingredients to accommodate your family’s food preferences. Week 1- Fruit Tacos- Ingredients- For each taco you will need: 1 small whole wheat tortillas, 2-3 strawberries, 4 banana chunks, 4-5 fresh or canned pineapple chunks, 2-3 kiwi pieces, 1 tbsp. cream cheese, 1 tbsp. Greek yogurt (plain or vanilla based on your preference), maple syrup for drizzling. Kitchen tools needed-1 cutting board/child, 3 bowls or containers for cut up fruit, plastic knives, tablespoons, spatulas, tongs, plates and spoons (for serving), bowl of water to rinse fruit, 1 clean dish towel to dry rinsed fruit, a large bowl or bin for soapy water to wash the dishes. Large towel to lay out dishes to dry. Week 2- Veggies and Spinach Dip- Ingredients- Dip- 1 package of frozen spinach, 1 250 mL container of sour cream, 1 cup of mayonnaise, 1 package of Knorr Vegetable Soup Mix. Each serving of dip will need a side of: 2 slices of cucumber, 2 cauliflower florets, 2 broccoli florets, 3-4 snap peas, 4 slices of red pepper, grape tomatoes (cut in quarters), 3 baby carrots, 3-4 whole grain crackers or a handful of tortilla chips. Kitchen tools needed- 1 cutting board/child, plastic knives, 3 bowls or containers for cut up vegetables, mixing bowl, mixing spoon, measuring cups, measuring spoons, microwave, tablespoon, tongs, plates (for serving), bowl of water to rinse vegetables, 1 clean dish towel to dry rinsed vegetables, a large bowl or bin for soapy water to wash the dishes. Large towel to lay out dishes to dry. Week 3- Mini Cucumber Sandwich Lunchbox- Ingredients- Each sandwich will need: 6 slices of cucumber, 2 pieces of whole grain bread, 1 tbsp. of cream cheese, salt shaker. For side servings, you will need: 3 slices of peach, 4 cubes of cheddar cheese Kitchen tools needed- 1 cutting board/child, plastic knives, tablespoons, tongs, plates (for serving), bowl of water for rinsing vegetable and fruit, 1 clean dish towel to dry rinsed vegetable and fruit, l large bowl or bin for soapy water to wash the dishes, large towel to lay out dishes to dry. Week 4- Mini Pizzas- Ingredients- For each pizza you will need: 1 whole grain English muffin, 2 tbsps. of pizza sauce, ½ cup of grated mozzarella cheese, ¼ green pepper, 1 mushroom, 2 pitted green olives, ¼ yellow onion Kitchen tools needed- toaster, microwave, 1 cutting board/child, plastic knives, tablespoons, cheese grater, can opener, spatula, plates (for serving), bowl of water to rinse vegetables, 1 clean dish towel to dry rinsed vegetables, large bowl or bin for soapy water to wash dishes, large towel to lay out dishes to dry. Week 5: Quesadilla with Black Bean Salad Ingredients-1 whole wheat tortilla wrap, 1 tbsp. shredded cheese, 1 can chickpeas, rinsed and drained, 1 orange bell pepper, 2 red pepper,1/4 cup cilantro, 2 cloves garlic, 1 tomato, 30 ounces black beans, 1 can corn, 2 tbsp. balsamic vinegar, 1 tbsp. olive oil, 1 tsp. salt, 1 bag tortilla chips. Kitchen tools needed- 1 cutting board/child, plastic knives, tablespoons, teaspoon, can opener, spatula, plates (for serving), strainer, garlic press, bowl of water to rinse vegetables, bowl, 1 clean dish towel to dry rinsed vegetables, large bowl or bin for soapy water to wash dishes, large towel to lay out dishes to dry.
